Finnish salmon soup is the perfect soup - it’s simple, warming, and absolutely delicious. The best part is that it’s extremely easy to make and comes together in just 30 minutes! Salmon soup is one of the most popular dishes in Finland and is traditionally served with rye bread or crusty artisan bread. It’s also a versatile course - the soup can be made as a simple weekday dinner or as an appetizer for a special occasion!
How to make salmon soup?
This recipe is one of my family’s dinner staples and for a good reason! For the soup base you can use actual fish stock instead of vegetable stock and clam juice. Now let’s get to the recipe!
In a large pot, bring vegetable stock, clam juice, chopped onions, and peppercorns to boil. Lower the heat to medium, add potatoes and boil for 10 minutes. Then add the salmon pieces and boil for another 10 minutes. Lower the heat to medium low and add butter. Once the butter has melted pour in cream and simmer for 5 minutes. Salt to taste. Serve hot with fresh dill!
Tips
Serve with lots of chopped fresh dill!
Traditionally Finnish salmon soup is served with rye bread on the side.
