These mocha bars have a gooey, rich brownie base that is frosted with smooth mocha icing. If you love fudgy, melt-in-your-mouth brownies with a chewy edge these are for you! This recipe was inspired by ‘mokkapalat’ which is a popular dessert in Finland featuring chocolate cake with mocha frosting. Here the chocolate cake is switched to brownies to create a rich mocha experience!

How to make mocha bars?

To start the recipe preheat your oven to 350 degrees. Spray a 9x9 baking dish with oil, line with parchment paper, and lightly spray with oil again. Melt 1 cup of butter in a medium bowl and add chocolate in while hot, stir until completely melted. In a large bowl, whisk together eggs, vanilla, salt, sugar and brown sugar. Then add chocolate mixture, and then flour. Pour in the prepared pan and bake for 45 minutes. Cool completely. In a medium bowl, whisk together 3/4 cup melted butter, coffee, cocoa powder, and powdered sugar until smooth. Pour on top of the brownie and let the icing set for about 15 minutes. Once set remove the mocha bars from the baking dish and cut into 9 pieces. Bring 1” of water to boil in a small pot and lower the heat to low. Set a small bowl over it and melt the white chocolate. Once smooth pour the chocolate in a piping bag and cut a small hole at the tip. Drizzle over the brownies and let set for 5 minutes.

Tips

  • Make sure the butter is hot enough to melt the chocolate chips.

  • Let the chocolate icing set for at least 15-30 minutes before serving so it’s soft but not runny.

  • Make sure not to overheat the white chocolate while melting it. If overheated, the texture will be gritty and thick instead of smooth and runny.
