How to make Dutch oven bread and bone marrow compound butter?

Now let’s get baking! First, preheat oven to 350 degrees. Place the marrow bones on a sheet pan and season with salt and pepper. Bake for 15-20 minutes and set aside to cool. In a food processor, pulse butter, tarragon, garlic and thyme together. Then using a butter knife hollow the bone marrows into the food processor and blend until smooth. Season to taste with salt and pepper and place in an airtight container. In a small bowl, mix together 1 1/2 cups of warm water and yeast. Set aside for 5 minutes or until foamy. In a large bowl, whisk together flour and 1/2 tbsp salt. Then pour in the yeast and water mixture. Lightly knead until just combined. If the dough is dry keep slowly kneading in more water until it’s slightly wet and loose. Cover with a damp kitchen towel and put it in a warm spot to rise for 2-3 hours. 45 minutes before the dough is done rising, preheat oven to 450 degrees and place Dutch oven in with the lid on. Pour the dough on a lightly floured surface and form a loaf, then place it in the hot Dutch oven and bake with lid on for 35 minutes. Then remove the lid and bake for an additional 5-8 minutes until golden brown. Cool on a wire rack for 10 minutes before cutting. Serve with bone marrow compound butter.

Tips

  • While the dough is rising make sure the towel remains slightly damp to avoid a dry top.

  • If your house is cool or the dough doesn’t double in size place it in front of a space heater to rise.

  • Preheat your oven with the dutch oven in it and when ready to bake pull out the hot dutch when ready to bake. This step will create a beautiful crust for your bread.
